A Welsh Winery, Not a Vineyard
There are no vines at Celtic Country Wines. Since 1989 the family has fermented wine from fruit, flowers and honey, and today it is all made at the winery in Henllan, a village near Llandysul in rural West Wales. Elderflowers are picked locally each summer; other fruit is sourced for quality so the range can be made all year round.
Every wine ferments in a 1,000-litre container, one batch at a time, in a room held at a steady temperature. Fermentation takes two to four weeks, then each batch rests for six months to mellow before bottling.
